This month we celebrate Mother’s Day. The concept of celebrating
 motherhood has been around since ancient times. The ancient Greeks paid tribute to Rhea (the Mother of the Gods) and motherhood in springtime – the most fertile time of year. Later, in the 17th century, England honoured mothers on the fourth Sunday of Lent. This celebration was .known as ‘Mothering Sunday’, and in England that is when it is still observed. Today many ‘Mother’s Day’ celebrations are held throughout the world. Although they do not all fall on the same day. In Australia, Mother’s Day is held on the second Sunday of May which this year is Sunday 13th May so make sure you let Mum’s who are special to you, know they are special.
As for my own mother, she was responsible for encouraging my interest in cooking from an early age. I remember the traditional Sunday roast and being responsible for stirring the gravy and being ‘very’ mindful not to get any lumps – I became “Gravy Stirrer” extraordinaire! Then she gradually introduced such things as omelet’s and Shepherds Pie or Cottage Pie (the difference being that Shepherd’s pie is made with lamb and Cottage Pie is made with beef mince.) Since then I haven’t looked back!
Traditionally Chrysanthemums are given as gifts. It wasn’t until after a life time of doing this I only discovered recently my mother’s least favourite flower is the Chrysanthemum so I’ve had to change my habit and come up with something else. Since cooking is my forte, I’ve created “Cookie and Candy Bouquets” for her instead. This was a huge success so I thought I’d offer them to my TGC friends as an option for their own special mums and along with some other ideas as well.

This month’s featured recipe was taken from an old New Orleans plantation homestead recipe cook book. The title is somewhat dubious but I think this refers to the height of the ice cream when it’s piled onto the pie base!

Method
1 pint vanilla ice-cream
1 pint chocolate ice-cream
8 egg whites at room temperature
½ cup sugar
¼ tsp cream of tartar
1 baked pie shell
